Dark Chocolate Coconut Bites

These little treats are the perfect size to pop in your mouth when you want to indulge in something chocolatey. You don’t have to feel bad at all about eating these because there is no added sugar, you get a nice shot of good fat from the coconut oil, and there’s plenty of protein and fiber from the coconut and almond butter. They are so good that Zach and I usually end up fighting each other for the last one. They are easily one of my favorite treats and they get bonus points for being so cute!

 

Dark Chocolate Coconut Bites

 

Ingredients:

 1 ½ cups shredded unsweetened coconut

2/3 cup coconut oil, not melted, but soft if at all possible

½ cup almond butter

1 tsp. vanilla

1 cup dark chocolate or dark chocolate chips, around 60 – 70% cacao tastes the best

1 T. coconut oil

optional toppings: sea salt, shredded unsweetened coconut, or slivered almonds

 Directions:

 Mix the shredded coconut, coconut oil, almond butter, and vanilla into a medium sized bowl. If your coconut oil is melted or if the mixture seems runny, put it into the fridge to harden up a bit or until you can easily form the mixture into balls. Form into 1 inch balls and place on a plate. Place in the freezer until they harden completely.

 In a double boiler, melt chocolate and 1 T. coconut oil and stir until smooth. Dip the balls into the chocolate. Place back on plate and if you’d like, top with any toppings you wish. Refrigerate until cold and the chocolate is hard. Enjoy!

    I made these tonight for my sister’s party. So fantastic! I made 2 batches. The 2nd batch I took some liberties and got creative, adding cocoa powder, cinnamon, and chocolate liquor. I topped them with sprinkles for a festive flair. Loved them!

    thank you- these were great! I added a teaspoon of honey and a pinch of salt to the mixture for my sweet-toothed husband. I made them in little silicone molds for ice cubes. Do you think, for next time (there will definitely be a next time!), I could replace some of the coconut oil with coconut butter? If so, how much? Thank you again!

      Awesome, so glad you both liked them 🙂 Great idea on the silicone molds!! Yes, you could definitely replace some/maybe all the coconut oil with coconut butter. I used the coconut oil as the binder to bind all the ingredients together. I would add just enough coconut butter until it’s thoroughly mixed and starts forming into a paste. Start on the lesser side (since you can always add more, but can’t take it away) and then adjust until you get a consistency like a paste. If it isn’t forming into a paste, maybe add a touch of coconut oil. Hope that helps! 🙂

    I’m going to try these using macademia nut coconut butter instead of the almond butter!
    Also, a print button for the recipe would be great (I’m not finding one, but I don’t have my glasses on either! LOL)
