Pumpkin Power Cookies (Paleo, Gluten Free, Vegan)

Nuts! Eating a small handful can pack your diet with filling protein, fiber, healthy fats, antioxidants and important vitamins and minerals. 

 

Health Benefits of Nuts

Eating 1 serving of nuts a day – or 1 small handful – has been shown to help brain health, heart health, skin health, men’s reproductive health, reduce risk of cancer, reduce tumor growth and there’s even some evidence that they can even help with weight loss. Yes, that’s right — nuts contain healthy fats that can actually help you lose weight and help boost your metabolism! (sourcesource)

 

Now you know why I appropriately named this recipe Pumpkin POWER Cookies. They certainly do contain some powerful health benefits…and will give you a nice boost of energy! This recipe is a great, delicious and easy way to give your health a boost! 

 

Although all nuts are rich in nutrition, one of my favorite nut varieties is the walnut. Not only are walnuts delicious, but the walnut contains the most amount of antioxidants (help protect agains disease) and omega-3’s (fight inflammation) out of all the nuts! Moreover, walnuts have even been shown to have anti-cancerous properties, cutting breast cancer risk in mice by 50 percent, and prostate cancer growth by 30 to 40 percent (source, source).

 

But let’s face it, nuts on their own sometimes get….well….boring. That’s why I came up with these cookies!

Pumpkin Power Cookies

By eating 1 or 2 of these Pumpkin Power Cookies, I get my daily serving of nuts (and other very important and nutrient dense foods like pumpkin seeds, coconut oil and pumpkin puree!) in a downright delicious, fun and very healthy way!

 

And these cookies are anything but boring. Just look at these babies! Little bites of walnuts, pecans, pumpkin seeds, a touch of honey, pumpkin, dried cranberries and even a bit of dark chocolate mixed in there….because sometimes a girl just needs some dark chocolate, am I right? 🙂

Pumpkin Power Cookies Recipe:

Pumpkin Power Cookies - Flourless! (Paleo, Gluten Free, Vegan)

These flourless Pumpkin Power Cookies are jam packed with nutrition! Makes a great grab and go healthy snack. Paleo, Gluten Free and Vegan.
Ingredients
Instructions
  1. Preheat oven to 350 degrees F.
  2. First, whisk together the pumpkin puree, coconut oil, honey, eggs, sea salt and pumpkin pie spice in a medium sized bowl until blended together.
  3. Then, add in the chopped nuts, pumpkin seeds, dried cranberries and mini chocolate chips and stir until everything is combined.
  4. Next, drop by spoonfuls onto lightly greased cookie sheet. Bake for 15 minutes. Lastly, let cool for a few minutes before removing cookies from the tray.
  5. Enjoy!

    I don’t know where you get your ideas, but these look fabulous and I’ll be making them tomorrow. My husband needs to *gain* weight and I’m hoping these might help. Seems the only options we know of to gain weight are unhealthy eating and being lazy, and that’s not us!

    Oh Kelly, I can’t wait to try these! They are loaded with things I love, including dark chocolate. And love how adaptable they are…I never really use chia eggs but think I will try for this recipe.

    These sounded so good I thought I’d double the recipe and bring some to my aqua fit class. This recipe is a keeper.

    My husband thought these were fantastic and grabbed three once they had cooled. I did add extra pumpkin spice – cinnamon, allspice, clove (a little) and nutmeg.

    These sounded amazingly good until I got to the mint chocolate chips. In my mind (or mouth) I can’t imagine that pumpkin spice and mint goes well together. While I understand I won’t know until I try it I am just a little afraid to try as I think mint would over power the pumpkin goodness and there would be wasting of some good stuff. I LOVE chocolate mint and I LOVE LOVE LOVE pumpkin anything with reg chocolate but this one just doesn’t come together well to me. Can someone that has made them reassure me this is a good thing? LOL

      NEVERMIND!!! My old eyes are playing tricks on me, i reread the recipe and went to where there is a picture of the chips to use and it is MINI not MINT! GOT to get my glasses checked and so glad that there is not a mint chocolate chip pumpkin pie spiced cookie out there!

    These are so good! My littlest to oldest liked these. Just made them for the first time today. Needed to substitute coconut for the dried cranberries. Perfect amount of sweetness and I know I am giving my family something GOOD for their palate and body. Will make a double batch next time and share the recipe with friends!

    You have no idea how happy it made me to get this recipe in my inbox today!!! I made these a few years ago and though I had saved it but alas! Next year when I tried to make them again I looked and looked and couldn’t find them anywhere! I flip through all of my books, even made the librarian print a list of every cookbook I have borrowed in the last few years to try to find them and nothing! I could not remember where it came from. I seriously thought I would never find it again. So thank you! Thank you so much for creating such a wonderful recipe and sharing it again. You made my day!

    What can you substitute for the honey

    I substituted 1/2 C Monkfruit sweetener for the honey, they are just as good with less calories and carbs than from the honey.
