Salmon Patties (Grain, Dairy, Nut Free)

Most kids don’t like fish because they think it’s stinky. Yet, I wasn’t the typical kid. My favorite fish to eat is salmon and I like to thank my Mom for that because she made the best Salmon Patties while I was growing up. When I went grain-free and could no longer consume breadcrumbs, I decided to recreate a grain-free version of her recipe. I hope you enjoy it.

Salmon Patties (Grain, Dairy, Nut Free)

Serves 2-4 people

Ingredients:

12 oz Salmon, shredded

1/4 cup green onions, sliced

2 eggs, whisked

1/4 cup sunflower seed flour (see my post here on how to make your own for cheap)

1/4 tsp dried oregano

1/2 tsp dried parsley

salt & pepper, to taste

coconut oil, for frying

Optional: cilantro, to garnish

Directions:

Mix the shredded salmon, green onions and whisked eggs together in a medium bowl.

Combine the sunflower seed flour, oregano, parsley, salt and pepper together in a separate bowl.

Stir the sunflower seed flour mixture into the shredded salmon mixture until well combined.

Form into 2-4 equal patties.

Fry the patties in a medium skillet over medium heat in coconut oil for a few minutes on each side until the outside is a golden brown color and slightly crispy.

Top with cilantro and serve.
