BLT Chicken

BLT’s (Bacon, Lettuce, and Tomato) were one of my favorite meals growing up as a kid. We ate BLT’s a lot during the summer and I just loved the juicy, garden ripe, ruby red tomatoes. Sometimes I would put fresh basil on my BLT as an extra treat and boy was it good.

 

I wanted to put a fun twist on the classic BLT so I created this BLT chicken dinner and of course, I had to add some fresh basil. This flavors in this dish are out of this world good!

Every season we declare a new favorite dinner and this has already been declared a favorite summertime dinner. I made it 3 times in one week because we couldn’t get enough of it. Yes, it’s that delicious :)

 

I tried so hard to get the pictures to look as good as this meal tastes. I don’t think I succeeded, so please take my word and promise me you’ll try this. You won’t regret it! The marinade for the chicken is amazing and makes the chicken so flavorful, tender and juicy.

The dinner is easy enough to serve up on a weeknight (make the marinade the night before and then it will only take minutes to put together), but looks fancy enough that you could serve it to guests. The chicken would also be great grilled and served at your next BBQ.

Ingredients
  1. 4-6 chicken breasts
  2. 3 tomatoes
  3. 2 tablespoons fresh basil, chopped
  4. 6 cups fresh lettuce
  5. 2 slices of cooked bacon per chicken breast (if you have 4 breasts, you'll need 8 slices of bacon)
  6. salt and pepper, to taste
Marinade
  1. 1/4 cup olive oil
  2. 1/4 cup balsamic vinegar
  3. 4 cloves garlic, minced
  4. 2 tablespoons fresh basil, chopped
  5. 1 teaspoon dijon mustard or dry mustard
  6. salt and pepper, to taste
Instructions
  1. Mix all the marinade ingredients together in a small bowl. Reserve 2 tablespoons of the marinade for serving. Pour the remaining marinade all over the chicken and marinade in the fridge for at least 1 hour up to 24 hours.
  2. Once the chicken is finished marinading, preheat the oven to 375. Salt and pepper the chicken and cook the chicken in a baking dish for 35 minutes or until cooked through.
  3. While the chicken is cooking, place the lettuce on a large serving plate. Cut 2 of the tomatoes in thick slices. Place the tomato slices on top of the lettuce and add a pinch of salt and pepper to the tomato slices. When the chicken is finished cooking, place the chicken on top of the sliced tomatoes. Lay 2 slices of cooked bacon over each chicken breast. Dice the remaining tomato, and put the diced tomatoes on top of the chicken. Pour the reserved 2 tablespoons of marinade all over the top of the diced tomatoes. Top with the remaining 2 tablespoons of fresh basil. Enjoy!
Notes
  1. You can cook the bacon before you cook the chicken. Put the bacon slices on a baking pan and put the pan in a COLD oven. Turn the oven to 375. Set a timer for 15-18 minutes. The bacon should be cooked perfectly around 15-18 minutes (or longer, depending on how thick it is).

    Love the addition of basil, too :) The scent alone when you pluck it off the plant to use for a recipe is already gorgeous

    I made this last night and it was a massive hit! My hubby was skeptical before I made it saying ‘it will just be a salad so maybe cook some rice to go with it’ but was amazed once I’d plated it. He quickly retracted the need for rice, although I’d cooked it so he had to eat humble pie and eat some of it. Will definitely be making this again. Oh and I added chopped avocado to the top cos I can’t help myself!

    • Thanks so much, Mariana!! And thanks for your feedback, too about the formatting. I agree with you – this way is by far my favorite. The only reason why I switched was because this formatting won’t let me include links in the recipe. And I really need to include links for 2 reasons:
      #1: It helps me offset some of my expenses for running this website. (If someone clicks on one of my links and makes a purchase, I get a tiny commission. It doesn’t affect the price of the product on your end at all and I ONLY link to things that I personally use, have and 100% love) I wish I didn’t have to include links for this reason, but the more popular this website gets, the greater the operating costs. I think many people would be shocked at how much I spend a month just to keep this site going.
