Southwestern Deviled Eggs

Southwestern Deviled Eggs Recipe from Primally Inspired (Paleo)
Ingredients
  • 12 hardboiled eggs (hard-boiled egg tutorial HERE)
  • 6 tablespoons mayonnaise (easy homemade mayo recipe HERE)
  • 1 green onion, both white and green parts, chopped
  • 1 tablespoon cilantro, finely chopped
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • ½ teaspoon garlic powder
  • sea salt & pepper, to taste
  • 1 jalapeño, thinly sliced
Instructions
  1. Slice your hard-boiled eggs in half lengthwise. Scoop out the yolks and put them in a bowl.
  2. In the yolk bowl, add in the mayonnaise, green onion, cilantro, chili powder, cumin, garlic powder, salt and pepper. Mash and stir until thoroughly mixed together.
  3. Place a dollop of the yolk mixture into the hollowed out egg whites. Continue until all the yolk mixture has been used and all the whites have been filled. Top each deviled egg with a thinly sliced jalapeño.
  4. Eat and enjoy immediately or refrigerate until ready to eat.
Notes
We love to serve these alongside some homemade guacamole (recipe HERE). You can even put a dollop of guac right on top, too!
