If you are a beet hater, promise me you’ll try my Maple Bacon Glazed Beets recipe. Just trust me on this one.

 

So go get yourself 2 bunches of beets and peel those babies up.

Then slice those beets. You can dice ‘em or you can slice ‘em. Doesn’t matter!  (1/2 inch diced or 1/4 inch sliced – I like ’em sliced because they look so pretty!)

 Then pour that melted, beautiful bacon fat onto a parchment lined baking pan.

 

 Place those sliced or diced beets onto the pan.

 

Make sure they’re all coated in that bacon grease.

Then just get a teensy bit of maple syrup. The good stuff. 100% pure maple syrup. Just a tablespoon will do.

 

And give those beets a nice little drizzle.

Your house will smell divine. Your neighbors may line up at your door.

 

When the timer goes off, out they come!

Maple Bacon Glazed Beet Recipe from Primally Inspired
Ingredients
  • 2 bunches of beets (about 8 medium sized beets), peeled and tops cut off
  • 3 tablespoons bacon fat, melted
  • 1 tablespoon pure maple syrup
Instructions
  1. Preheat oven to 400 degrees F.
  2. Slice your beets in ¼ inch slices or you can dice them in ½ inch pieces.
  3. Place the sliced beets on a parchment lined baking pan.
  4. Pour melted bacon grease over the beets and toss, making sure both sides are well coated.
  5. Drizzle the maple syrup over the top of the beets.
  6. Bake for 40 minutes to 1 hour or until beets are well roasted. Let cool then dig in!
Notes
Depending on how salty your bacon grease is, you probably won't need any extra salt. It's best not to salt them until you've tried them after they've baked. If they need more salt, sprinkle some on top 🙂

    Wow, I am surprised no one has commented yet! I am actually a beet lover, so I will try this after my next farmer’s market trip. One of my favorite ways to use beets is to roast them whole, skins on. Let them cool, peel, and dice. They are great in salad. My favorite combo is spring mix, diced roasted beets, walnuts and blue cheese with a drizzle of balsamic vinegar and really good olive oil. Great late summer salad!

    You were right! I’ve never been able to handle beets but I got some in a box of produce and didn’t want to throw them away. These were pretty good! I overcooked mine just a bit, but I will definitely make these again if I have beets to eat up!

    WOW ! I know they are super healthy but I think beets taste like dirt.
    This was delicious !! I did not have any maple syrup so I followed the recipe and drizzled them with honey, then sprinkled it all with cracked pepper. Awesome ! Delicious flavor and great texture.

    Kelly, I don’t eat pork, so wouldn’t use the bacon grease. I know it will change the taste of the recipe, but could I substitute coconut oil?
