Halloween Dinner – Jack-o-lantern Philly Steak Stuffed Peppers

Sorry, I couldn’t resist! But seriously, how cute are these little stuffed jack-o-lantern peppers?! I grew up within a close drive to Philly so I’ve had my fair share of Philly cheese steaks. The Philly cheese steak was one of my first dishes that I โ€œpaleo-izedโ€ a few years ago and this recipe has been a favorite ever since. Now I prefer my stuffed pepper to the traditional roll. I wanted to have a little fun and make jack-o-lanterns with my little peppers this time around. I think they turned out adorable and made eating dinner a lot more fun. The steak and some of the filling spewed out of one of the peppers mouth when I pulled the pan out of the oven and Zach and I definitely got a good laugh.

 Jack-o-Lantern Paleo Philly Steak Stuffed Peppers

 Serves 4

Ingredients:

 4 peppers, (I used orange to be festive for Halloween, but you can use any color) cut off the top and clean the seeds out

1 lb grass-fed chipped steak

8 oz mushrooms, sliced

1 onion, cut in half and sliced

1-2 T coconut oil, olive oil, or grass-fed butter

1 T grill seasoning such as Montreal Steak Seasoning

1 tsp minced garlic

1 tsp all natural worcestershire sauce

Optional toppings: slice of cheese if you eat dairy, ketchup, mayo, hot peppers, etc. Zach mixes equal amounts of ketchup and mayo and creates a little tomato mayo sauce for his.

 Directions:

 Preheat the oven to 400 degrees. Cut the tops off the peppers and remove the seeds. If you are making jack-o-lanterns with your peppers, just cut whatever designs you want with a knife now. Place the peppers in a baking pan filled with a ยฝ inch of water. Cook the peppers in the oven for 10-20 minutes. I like my peppers still crisp, so I only cook them for 10 minutes. If you like your peppers softer, cook for about 20-30 minutes or until they are to your liking.

While the peppers are cooking in the oven, start the filling. Melt the oil or butter into a pan over medium heat. Toss in the onions and garlic and cook for a few minutes until the onions are a little soft. Add in the grill seasoning and mushrooms and cook a few minutes longer. Add in the chipped steak and cook until the steak is done to your liking. Add in the worcestershire now. Your filling is done so now just stuff the peppers. If you are using cheese, place cheese on top of the filling and put back into the oven until cheese melts. You can top the stuffed peppers with anything you desire. I like to use ketchup on mine. Enjoy!

    That is ADORABLE! I must try this. I’m in Texas, and we eat lots of beef, but, um, what is “chipped steak”??

      It’s just steak that’s cut very, very thin (what they use for steak sandwiches). There’s probably another name for it, but that’s what my butcher down here (in Maryland) calls it ๐Ÿ™‚
