Crock Pot Sesame Chicken Lettuce Cups

Sesame Chicken Recipe made in your slow cooker! Paleo, Gluten Free.
Ingredients
Serving suggestions: lettuce leaves, sliced green onions, toasted sesame seeds, kimchi (recipe HERE), spicy mayo (recipe in notes section), avocado slices
Instructions
  1. Add your chicken to the crock pot.
  2. Mix together the coconut aminos, balsamic vinegar, sriracha, garlic powder, onion powder, ground ginger, sesame oil and sweetener (if using) in a small bowl. Pour over the chicken.
  3. Set your crockpot to low, cover and cook for 4-6 hours for fresh chicken and 6-8 for frozen.
  4. 20 minutes before serving, mix together the arrowroot and water. Turn the crock pot to high and pour the arrowroot mixture over the chicken. Stir. Cover and cook for 20 minutes or until the sauce has slightly thickened.
  5. Serve the chicken on lettuce leaves (romaine, iceberg and green leaf lettuce make great cups!) and top with toasted sesame seeds and any other optional ingredients that you wish. Enjoy!
Notes
Sometimes I also like to add to the crock pot 1 cup of shitake mushrooms (or 1 cup of any veggies I have on hand) with the chicken.

To make spicy mayo:
1 tablespoon sriracha mixed into 3 tablespoons mayonnaise.

*I like to double the recipe because the leftovers are even better! :)
