One Pan Wonder: Prosciutto Wrapped Pesto Chicken with Roasted Tomatoes

Ingredients
  • 4 chicken breasts
  • 2 pints of cherry tomatoes
  • 1 red onion, sliced in half-moon slices
  • ¼ cup pesto (here's a good quality storebought version)
  • 4 pieces of prosciutto
  • 1-2 tablespoons olive oil (or other fat of choice. Lard is great, too!)
  • sea salt and pepper, to taste
Instructions
  1. Preheat your oven to 450 degrees F.
  2. Put your cherry tomatoes and onions on a rimmed baking pan.
  3. Salt and pepper the veggies.
  4. Pour your olive oil or other fat over the vegetables and toss to coat.
  5. Salt and pepper both sides of your chicken.
  6. Spread about 1 tablespoon of pesto over each chicken breast.
  7. Wrap with one slice of prosciutto.
  8. Place the chicken breasts in the pan with the tomatoes.
  9. Bake for 25 minutes or until tomatoes burst and chicken is cooked through.
  10. Enjoy!
