We’ve been a little obsessed with Buffalo Ranch anything lately. I wish I was joking when I tell you that I made 8 things last week that consisted of Buffalo Ranch something or other.

But we totally can’t get enough of this Buffalo Ranch Chicken Salad! I’ve been doubling or tripling this recipe on Sunday night and then we eat it all throughout the week for a quick, nutrient dense lunch.

It’s great on top of a salad. You can stuff it in an avocado. You can eat it with celery sticks. You can even put it in a nice juicy tomato like THIS.

Buffalo Ranch Chicken Salad via Primally Inspired

Buffalo Ranch Chicken Salad Recipe

Buffalo Ranch Chicken Salad

Buffalo Ranch Chicken Salad from Primally Inspired
Ingredients
  • 1½ cups cooked shredded or chopped chicken (about 2 breasts or 1 pound of uncooked chicken)
  • 1 green onion, chopped, both white and green parts
  • 1 celery rib, chopped
  • ½ teaspoon dried parsley
  • ¼ teaspoon each: onion powder, garlic powder, dried dill, dried chives, sea salt and pepper
  • 2 tablespoons mayonnaise (see my easy 30 second homemade recipe HERE) or you can use sour cream or Greek yogurt
  • 2 tablespoons hot sauce (I use THIS)
  • optional: 2 tablespoons blue cheese crumbles
Instructions
  1. Combine all ingredients together in a bowl.
  2. Refrigerate, serve and enjoy!
  3. *The flavor is best when left in the fridge for a few hours, but you can certainly eat it right away, too 🙂
Notes
How I cook my chicken for this recipe: Put chicken in a pot, cover with water and bring to a boil. Once boiling, reduce the heat to low and cover. Chicken is usually done in 10-15 minutes.

*top with fresh herbs like chives, extra green onion or cilantro

    I need some food on the run this week, so I made this. I made a double batch, and now I’m wishing I had made even more!! This stuff is fantastic! Thank you!

    Yum!! I am eating this at my desk as I type. I made this last night and used greek yogurt instead of the mayo. Once the chicken breast were boiled, I threw them (not literally) into my food processor, which makes it so simple to chop it up fast. I put it on a bunch of lettuce and added some avocado and feta and it’s perfect! I’m glad I found this!

    Would a basic olive oil & apple cider vinegar dressing work well for those of us with milk and egg allergies?

    I just made this and had it with chopped romaine. I sautéed the chicken in coconut oil and used olive oil mayo and Franks’s Red Hot.

    It is ridiculously tasty!
