Have you guys ever had a scotch egg? I think I’ve been deprived my whole life because I just had one for the first time a few months ago!

 

Man, I’ve been missing out!! They are much easier to make than I expected and taste out of this world – I’m hooked 🙂

I first made Popular Paleo’s scotch eggs (she has a maple walnut version – can you say yum?!), which inspired me to create my own version of the scotch egg.

 

They’re slightly spicy and slightly smoky and just plain delicious. If you want more spice, serve them with my favorite Paleo approved sriracha sauce – that will do the trick 🙂

Not only do these taste amazing, but they are the ultimate grab and go breakfast, snack, lunch or even dinner food! They’re a perfect option for a pre-workout meal, too. Enjoy!

 

5 Ingredient Smoky and Spicy Scotch Eggs

Serves: Makes 6 scotch eggs
 
5 Ingredient Smoky and Spicy Scotch Eggs
Ingredients
  • 6 eggs
  • 1½ lbs ground pork sausage
  • 1 teaspoon chili powder
  • ½ teaspoon smoked paprika
  • 2 tablespoons fresh chives, chopped
  • sea salt and pepper, to taste
Instructions
  1. Preheat oven to 375 degrees.
  2. Put eggs in a pot and cover with water.
  3. Bring to a boil.
  4. Once the water is boiling, remove the pot from heat and cover.
  5. Let sit for 10-12 minutes or until yolks are done to your liking.
  6. Remove the eggs from the water and let cool until they are cool enough to handle.
  7. Peel the shell off the eggs.
  8. When the eggs are cooling, mix sausage, chili powder, smoked paprika and green onions and salt and pepper in a bowl until well combined.
  9. Divide sausage mixture into 6 sections.
  10. Flatten each sausage section and mold it around the cooked egg and then place the sausage wrapped egg on a baking pan.
  11. Repeat with remaining sausage sections and eggs.
  12. Bake for 30 minutes or until sausage is cooked throughout and slightly browned on top.
  13. Eat just as they are or serve with dijon mustard or sriracha sauce.
  14. Enjoy!

    What an interesting idea! It’s probably not new, but it’s new to me. 🙂 I always have loads of hard-boiled eggs on hand, and I have some pork sausage in the freezer, and I’m on Day 10 of the paleo diet! The stars are aligned! I’m going to make these for breakfast tomorrow and wow my husband with my kitchen prowess. Thanks for the amazing idea!!!

    I have a question about this recipe. The ingredient list mentions fresh chives but the instructions say green onions. Does it matter which one I use? Which one do you like? Thanks!

    Meat and eggs, what more could anyone want!?! We see Scotch Eggs being made on tv cooking shows all the time but of course they’re far from being paleo-friendly. So this recipe is definitely something we’re going to try! Thank you 🙂

    These were delightful, but I used turkey sausage, just squeezed them out of the casings! I used a white remoulade sauce to dip them in, got that recipe out of the pirates pantry cook book. Thank you so much for sharing your recipe.

    I am wondering, once cooked, can these be frozen and then re-heated? I have never frozen a hard boiled egg, so just wondering if anyone has ever do that with this recipe or with eggs in general. Thanks!

      I have never frozen a scotch egg before and am curious to know this as well! I know, in general, boiled eggs are not recommended to freeze because the white part turns rubbery. So I wonder if that would be the case with the scotch egg?? I’m not sure, but maybe someone else can chime in with the answer.

    I roll mine in pork rind flour before cooking. Love the crunch. Never thought of making them spicier! Yum!

    I plan on trying these for my Cajun husband with my deer/pork sausage. Probably will tweet it a bit to make it hotter for him. My daughter made the maple her husband loved them.
