Today’s guest post is by Rachel from Soundness of Body & Mind. I consider Rachel a friend and an inspiration. Her transformation story and journey to healthy living is admirable. Her passion for health and wellness is contagious and she documents her journey on her blog. Her blog has everything from healthy recipes to nutrition tips to healthy living posts. Her Caramelized Pineapple and Onion Pork Chops are one of my favorite dinner recipes! Most kids don’t like fish because they think it’s stinky. Yet, I wasn’t the typical kid. My favorite fish to eat is salmon and I like to thank my Mom for that because she made the best Salmon Patties while I was growing up. When I went grain-free and could no longer consume breadcrumbs, I decided to recreate a grain-free version of her recipe. I hope you enjoy it.
Salmon Patties (Grain, Dairy, Nut Free)
By: Rachel, Soundness of Body & Mind
Serves 2-4 people
12 oz Salmon, shredded
1/4 cup green onions, sliced
2 eggs, whisked
1/4 cup sunflower seed flour (see my post here on how to make your own for cheap)
1/4 tsp dried oregano
1/2 tsp dried parsley
salt & pepper, to taste
coconut oil, for frying
Optional: cilantro, to garnish
Mix the shredded salmon, green onions and whisked eggs together in a medium bowl.
Combine the sunflower seed flour, oregano, parsley, salt and pepper together in a separate bowl.
Stir the sunflower seed flour mixture into the shredded salmon mixture until well combined.
Form into 2-4 equal patties.
Fry the patties in a medium skillet over medium heat in coconut oil for a few minutes on each side until the outside is a golden brown color and slightly crispy.
Top with cilantro and serve.
Meet Rachel from Soundness of Body & Mind
Rachel is a former high school math teacher currently pursuing the opportunity to share with others her passion for nutrition. Over the course of two years, she completely transformed her diet consisting entirely of processed foods to a clean eating diet. She faced many obstacles along the way, including the development of health problems as the result becoming underweight for a period of time. She created her blog, Soundness of Body & Mind, as a way to document her experiences and knowledge that she gains along the way.
