Burgers with Egg and Garlic Butter Balsamic

This summer has been incredibly busy for me. I haven’t had a lot of time to spend in the kitchen, which results in eating super quick meals with not a lot of creativity. So I wanted to share with you my go-to quick meal that I’ve been eating a lot these days.

I should also mention that I have a commitment to eating real food so I don’t let my busy life give me an excuse to pull into the drive-thru. But this wasn’t always the case. Throughout my years of eating real food, I’ve learned to be armed and prepared when busy days happen so I don’t have to pull in that drive-thru or pick up the phone and order takeout. (Not saying it never happens, though – I’m far from perfect!)

 

But one of the ways I stay prepared is to always have some real food, nutrient dense, staple items in my fridge or freezer at all times that are super quick and easy to prepare.

 

For me, my staple foods are packs of grass-fed beef burgers and sweet potato fries (recipe coming soon!) in my freezer, farm fresh eggs in my fridge and avocado in my fruit basket. These are highly nutrient dense foods that are both quick and filling (and fairly inexpensive when you consider you’re getting a ton of nutritious bang for your buck).

Because a burger, eggs and sweet potato fries are entirely too boring for me, I spruce it up with my garlic butter balsamic sauce (that I also keep in my fridge at all times because that stuff is bangin’ and good on everything).

I first introduced you to this sauce back when I gave you my bacon avocado cup recipe. Many of you raved over the sauce and I heard more than one person say that they literally licked the plate clean because they didn’t want one drop of sauce to go to waste. I totally do that, too 😉

So while the burgers and sweet potato fries are cooking, I slice up whatever veggies I have on hand to top my burger. I also fry an egg and stack it up on my burger and then pour the garlic butter balsamic sauce all over the whole dang plate. It’s such a wonderful nutrient dense, balanced meal that includes healthy fats and carbs and a nice, hefty dose of protein. This meal keeps me full and energized for hours.

Quick Meal Series: Burgers with Egg and Garlic Butter Balsamic

Ingredients
  • beef burgers
  • eggs
  • Toppings: lettuce, onion, avocado, tomato, etc.
  • Garlic Butter Balsamic Sauce (serves 2):
  • 3 tablespoons butter
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon garlic, minced
Instructions
  1. Cook the burgers and eggs to desired doneness.
  2. While the burgers are cooking, cut any veggies for your topping.
  3. Meanwhile, over low heat, stir the butter, balsamic and garlic in a small pot.
  4. Stir constantly for a minute or two until the mixture is boiling.
  5. As soon as it boils, remove from heat.
  6. Top your burger with egg(s) and any additional veggie toppings.
  7. Drizzle the garlic butter balsamic sauce all over the burgers.
  8. Enjoy!
Notes
I like to quadruple the garlic butter balsamic sauce recipe and keep some stored in a mason jar in the fridge so I can have it at all times 🙂

    That sauce sounds great – how long do you think it keeps in the fridge?

      I think a really, really long time (how’s that for an answer lol) It’s just butter (and I keep butter for months in my fridge) and balsamic (which keeps forever) so I don’t think you have anything to worry about!

    This looks amazing!! Can you point me to your recipe for your sweet potato fries?

    Also, the thing that’s the hardest for me to fully switch over to paleo is when something throws my schedule off (having to stay late for work or I forget to set something out for dinner.) I would love to hear more about how you handle that. Or a list of ideas to always have made up in your freezer. Or anything else you can think of to help those in my situation. Do you have posts along those lines? Or a post about how to more easily “do” paleo? I will do great for a week or two and then something will happen and it all goes down hill for another week or month. I guess maybe it’s more organization that’s needed. Anyway, I love your site and have recommended it to many of my friends. Please keep doing what your doing! 🙂

    I just wanted to come back and tell you that I tried this. My husband asked what I did to make the hamburgers. I didn’t really understand what he was asking me and I said they’re hamburgers? He said, “I don’t know what you did but this might just be the best burger I’ve ever had!” I about died. But I swear, that sauce makes it amazing! I’ve even made it and poured it over meatloaf and a side of green beans. We both LOVE this stuff!! Thanks so much!

    I’m really new to this site and have tried a few recipes on the suggestion of my niece. I would really love to know the recipe to those SWEET POTATO FRIES. I saw somebody else had asked and it didn’t see a response so I thought I would try. yours look like they really held up and didn’t turn to sog like so many others that I have tried.     Fabulous! I served the sauce over baked salmon tonight. Had to restrain myself from overindulging too much. LOL – that means I did eat too much because I didn’t want to stop.

    This is a new family favorite! I made it for the first time last month and we’ve had it twice more since. Also loved this sauce over asparagus spears.
