Pumpkin Chocolate Chip Cookies from Primally Inspired (Grain Free, Paleo)
Ingredients
Instructions
  1. Mix together the butter, pumpkin puree, maple syrup, egg and vanilla extract.
  2. Add in the tapioca flour, coconut flour, pumpkin pie spice, baking soda and salt and stir until combined. Add in the chocolate chips.
  3. Refrigerate batter for 30 minutes or longer (the batter will stiffen up in the fridge).
  4. Preheat oven to 375 degrees F.
  5. Drop batter by spoonfuls onto a parchment lined cookie sheet. Flatten the cookies with your fingers or the back of a spoon.
  6. Bake for 12-15 minutes or until lightly golden brown. Enjoy!
Notes
To make the cookies really pretty, press a few additional chocolate chips onto the tops of each cookie once they come out of the oven :)
