Salmon and Avocado Salsa Recipe

Ingredients
  • 2 pounds of salmon
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • sea salt and pepper, to taste
  • 1-2 tablespoons oil of choice (butter, avocado oil, etc.)
  • For the Avocado Salsa:
  • 2 avocados, peeled and diced
  • 1 small red onion, finely diced
  • 3 mild to hot peppers, seeded and finely diced (jalapeno, banana, etc. work well)
  • juice of 3 limes
  • 2 tablespoons olive oil
  • 2 tablespoons fresh cilantro, chopped
  • sea salt and pepper, to taste
Instructions
  1. Combine all the salsa ingredients in a bowl.
  2. Place the salsa in the fridge until ready to use.
  3. Preheat oven to 400 degrees F.
  4. Place the salmon on a lightly greased baking pan.
  5. Combine your spices in a small bowl.
  6. Rub the spice mixture over both sides of the salmon.
  7. Place a small pat of butter over each piece of salmon.
  8. Bake for 12-15 minutes or until salmon flakes easily with a fork.
  9. Serve with the avocado salsa.
