I love a good slow cooker recipe. Mostly because I’ve been such a lazy cook these days. Throwing a few simple ingredients in a crock pot and letting it do all the work for me? I’m totally in.

 

Crock pot meals tend to be hit or miss with my family, but this Crock Pot Lemon Pork recipe is one we can’t get enough of! It’s one of my staple slow cooker recipes.

 

It’s super simple with just a few ingredients. And all those leftover juices make the best lemon, herb gravy. It’s so delicious!

 

We like to serve this lemon pork with a simple side salad and some buttered broccoli. And then I slather the delicious lemon herb juices over everything 🙂

 

If you don’t eat pork, it’s fabulous with chicken, too. I hope you’ll give this recipe a try and then let me know what you think!

Crock Pot Lemon Pork Recipe

Ingredients
  • 1 pork roast, about 4 pounds
  • 1 cup chicken broth
  • 6 cloves garlic, minced
  • 1 lemon, zest and juice
  • 1 teaspoon dried Italian seasoning (I use THIS)
  • 2 sprigs fresh thyme
  • ½ teaspoon sea salt
  • ¼ teaspoon pepper
Instructions
  1. Place your pork in the slow cooker and add the remaining ingredients.
  2. Cover and cook on low for 8 hours.
Notes
Don't eat pork? Use chicken instead!

    I’ve put a pork roast on my shopping list and will give this a try this weekend.
    When you suggest a lemon gravy do you mean to add something to the left over juices to make a gravy or do you mean just the relatively clear pan drippings? Do you strain out any fat? if it is a gravy, what do you mix in to the drippings?

    Thanks for the good sounding recipe.
